I love quick and easy breakfast sandwiches….especially on busy mornings. Too bad most breakfast sandwiches need bread Here is a great recipe for a breakfast “sandwich” omelet, which in my opinion is way better than a “bread” breakfast sandwich because you can incorporate loads of veggies in the omelet part.
Here is what you will need:
A muffin pan
12 slices of deli ham
6 eggs
2 tablespoons almond milk
salt and pepper
1/4 cup shredded cheddar cheese
1/4 cup veggies of your choice ( onions, mushrooms, spinach, tomato, green peppers and more!)
Directions:
Place a slice of ham in each muffin section of the muffin tin. it should look like a cupcake liner.
bake ham at 350 degrees for 5 min.
In a bowl, whisk the eggs together like you are going to scramble them
Add the almond milk, cheese and veggies, salt and pepper to taste.
Pour the egg mixture into the “ham” muffin liners and fill to the top.
Place back in the oven and bake for another 20 min. at 350 degrees.
Refrigerate for up to 5 days and reheat in the microwave for a fast breakfast!
